Ingredients

  • 1 cup feta cheese
  • 1/2 cup ricotta cheese
  • 1 onion, chopped
  • 3 eggs, beaten
  • 1 package phyllo dough
  • 1/2 cup olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, sauté the onion until translucent.
  3. Add spinach and cook until wilted.
  4. In a bowl, mix the cooked spinach, feta, ricotta, and beaten eggs.
  5. Layer phyllo dough and brush with olive oil.
  6. Spoon the filling and roll into a spiral shape.
  7. Place on a baking sheet and brush with more olive oil.
  8. Bake for 30-35 minutes until golden brown.
