- 2 cups butternut squash, peeled and cubed
- 2 cups carrots, sliced
- 1 cup red onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
