  • 2 cups butternut squash, peeled and cubed
  • 2 cups carrots, sliced
  • 1 cup red onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
