Slow Cooker Honey Garlic Chicken Noodle Bowls

  • 1 pound boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 cup chicken broth
  • 4 cups egg noodles
  • 1 cup frozen mixed vegetables
  • 2 tablespoons green onions, sliced

Instructions

  1. In a slow cooker, mix together honey, soy sauce, and minced garlic.
  2. Add the chicken thighs into the mixture and coat them well.
  3. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
  4. Remove chicken, shred it, and return it to the slow cooker.
  5. In a small bowl, mix cornstarch with a little chicken broth to create a slurry.
  6. Add slurry and remaining chicken broth to the cooker, stirring well.
  7. Cook on high for an additional 30 minutes to thicken the sauce.
  8. Meanwhile, cook egg noodles according to package instructions.
  9. Serve the chicken and sauce over the noodles and top with mixed vegetables and green onions.

Notes

  • This dish can be spiced up with red pepper flakes for a heat kick.
  • Feel free to substitute chicken with tofu for a vegetarian option.
