- 1 pound boneless, skinless chicken thighs
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon cornstarch
- 1 cup chicken broth
- 4 cups egg noodles
- 1 cup frozen mixed vegetables
- 2 tablespoons green onions, sliced
- In a slow cooker, mix together honey, soy sauce, and minced garlic.
- Add the chicken thighs into the mixture and coat them well.
- Cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
- Remove chicken, shred it, and return it to the slow cooker.
- In a small bowl, mix cornstarch with a little chicken broth to create a slurry.
- Add slurry and remaining chicken broth to the cooker, stirring well.
- Cook on high for an additional 30 minutes to thicken the sauce.
- Meanwhile, cook egg noodles according to package instructions.
- Serve the chicken and sauce over the noodles and top with mixed vegetables and green onions.
