Slow Cooker Homestyle Pot Roast with Carrots and Potatoes

A comforting slow cooker recipe for a homestyle pot roast with tender meat, carrots, and potatoes.

  • 3 pounds beef chuck roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups carrots, chopped
  • 4 cups potatoes, cubed
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme

Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. Place the carrots, potatoes, onion, and garlic in the slow cooker.
  3. Put the seasoned roast on top of the vegetables.
  4. In a mixing bowl, combine beef broth, Worcestershire sauce, and thyme; pour over the roast.
  5. Cover and cook on low for 8 hours or until the meat is tender.
  6. Once done, shred the meat and serve with the vegetables.

Notes

  • For added flavor, sear the roast in a skillet before placing it in the slow cooker.
