Slow Cooker Ground Beef Stew

A comforting and hearty slow cooker ground beef stew perfect for chilly nights.

  • 1 pound ground beef
  • 4 cups beef broth
  • 3 cups diced potatoes
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Add beef to slow cooker along with broth, potatoes, carrots, celery, onion, garlic, tomato paste, thyme, rosemary, salt, and pepper.
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  5. Serve hot.

Notes

  • For extra flavor, you can add Worcestershire sauce or a splash of red wine.
