Slow Cooker Creamy Beef Stroganoff

  • 2 pounds beef chuck roast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 8 ounces mushrooms, sliced
  • 1 cup sour cream
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • salt to taste
  • pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the beef and brown on all sides.
  2. Add the onion and garlic, cooking until softened.
  3. Transfer the mixture to the slow cooker. Add beef broth, Worcestershire sauce, paprika, and mushrooms.
  4. Cover and cook on low for 7-8 hours or until the beef is tender.
  5. In a small bowl, mix cornstarch and water. Stir into the slow cooker along with the sour cream. Cook for an additional 30 minutes.
  6. Season with salt and pepper to taste. Serve hot.
