One-Pot Beef Taco Pasta

A delicious and easy recipe for a one-pot beef taco pasta perfect for busy nights!

Ingredients

  • 1 pound ground beef
  • 12 ounces pasta
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 bell pepper, diced

Instructions

  1. In a large pot, heat the olive oil over medium heat and sauté the onion and bell pepper until soft.
  2. Add the ground beef and cook until browned. Drain excess fat.
  3. Stir in the taco seasoning, beef broth, diced tomatoes, corn, and pasta.
  4. Bring to a boil, then cover and reduce to a simmer for about 15-20 minutes or until pasta is cooked through.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Serve warm.
