Loaded Cowboy Crockpot Pot Roast Chili

A delicious and filling chili that combines the heartiness of pot roast with the flavors of the Wild West.

  • 2 pounds chuck roast
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 2 cups beef broth

Instructions

  1. In a crockpot, place the chuck roast at the bottom.
  2. Add the drained black beans, kidney beans, diced tomatoes, and corn.
  3. Top with the chopped onion and minced garlic.
  4. Sprinkle the chili powder, cumin, paprika, and black pepper over the top.
  5. Pour the beef broth over all the ingredients.
  6. Cover and cook on low for 8 hours or until the roast is tender.
  7. Shred the meat and mix it back into the chili before serving.

Notes

  • For a spicier kick, add diced jalapeños or cayenne pepper.
  • This dish pairs well with cornbread.
