- 2 pounds chuck roast
- 1 can black beans, drained
- 1 can kidney beans, drained
- 1 can diced tomatoes
- 1 cup corn
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 2 cups beef broth
- In a crockpot, place the chuck roast at the bottom.
- Add the drained black beans, kidney beans, diced tomatoes, and corn.
- Top with the chopped onion and minced garlic.
- Sprinkle the chili powder, cumin, paprika, and black pepper over the top.
- Pour the beef broth over all the ingredients.
- Cover and cook on low for 8 hours or until the roast is tender.
- Shred the meat and mix it back into the chili before serving.
