  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 bay leaves
  • 1 tablespoon fresh thyme
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef chuck roast and sear on all sides.
  3. Remove the roast and set aside. Add onions and garlic to the pot and sauté until translucent.
  4. Deglaze the pot with red wine, scraping up any browned bits.
  5. Add broth, carrots, celery, bay leaves, and thyme. Return the roast to the pot.
  6. Bring to a simmer, cover, and cook on low heat for 3-4 hours until the beef is tender.
  7. Remove bay leaves before serving.
