High-Protein Salsa Verde Chicken Enchilada Bake

A delicious and nutritious high-protein dish perfect for family gatherings.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup salsa verde
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 8 whole wheat tortillas
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine chicken, salsa verde, black beans, and corn.
  3. Spread a layer of the mixture on the bottom of a baking dish.
  4. Layer 4 tortillas over the mixture, then add another layer of the chicken mixture.
  5. Top with remaining 4 tortillas and sprinkle with shredded cheese.
  6. Bake in the oven for 25-30 minutes until the cheese is bubbly and golden.

Notes

  • For added flavor, consider garnishing with fresh cilantro.
  • Can be made ahead and stored in the refrigerator overnight.
