- 2 cups cooked chicken sausage, sliced
- 1 can (15 oz) white beans, drained and rinsed
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1 cup kale, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the sliced chicken sausage and cook until browned.
- Stir in the diced tomatoes, chicken broth, white beans, thyme, and smoked paprika.
- Bring to a boil, then reduce heat and let simmer for 20 minutes.
- Stir in the kale and cook for an additional 5 minutes, until wilted.
- Season with salt and pepper to taste, then serve hot.
