- 2 medium spaghetti squash
- 1 pound ground chicken
- 1 cup marinara sauce
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil on the cut sides, season with salt and pepper, and place cut-side down on a baking sheet.
- Bake for about 40 minutes or until tender.
- While the squash is baking, heat a pan over medium heat and add ground chicken, garlic, and Italian seasoning. Cook until the chicken is browned and cooked through.
- Stir in the marinara sauce and cook for an additional 5 minutes.
- Once the squash is done, scrape the insides with a fork to create spaghetti-like strands.
- Mix the spaghetti strands with the chicken mixture and fill the squash halves with the mixture.
- Top with mozzarella and Parmesan cheese.
- Return to the oven and bake for another 10 minutes until the cheese is bubbly and golden.
