- 4 large russet potatoes
- 2 cups shredded cooked chicken
- 1/2 cup buffalo sauce
- 1/2 cup Greek yogurt
- 1 cup shredded cheese
- 2 green onions, sliced
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and pierce them with a fork. Bake for about 45-60 minutes until tender.
- Once baked, cut each potato in half and scoop out the insides, placing them in a bowl.
- Add the shredded chicken, buffalo sauce, Greek yogurt, half of the cheese, green onions, garlic powder, salt, and pepper to the bowl. Mix well.
- Fill the potato skins with the mixture and top with remaining cheese.
- Bake for an additional 15-20 minutes until the cheese is melted and bubbly.

- For extra flavor, you can add some ranch dressing to the mixture.
