- 1 pound ground turkey
- 4 slices turkey bacon
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 can (15 oz) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups mixed vegetables (frozen or fresh)
- 1 cup leafy greens (optional)
- In a large pot, cook the turkey bacon until crispy, then remove and set aside.
- Add ground turkey to the pot and cook until browned.
- Add onion, carrots, and celery; cook until softened.
- Stir in beef broth, diced tomatoes, and Italian seasoning.

- Add mixed vegetables and cooked bacon; heat through.
