  • 2 slices turkey bacon
  • 1 green onion, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon vegetable oil

Instructions

  1. In a bowl, whisk together the eggs, salt, and pepper until well combined.
  2. Heat the vegetable oil in a non-stick pan over medium heat.
  3. Add the chopped turkey bacon and cook until crispy.
  4. Pour the egg mixture over the bacon and sprinkle with green onion.
  5. Let it cook for a minute or two until the edges start to set.
  6. Using a spatula, gently roll the omelette from one side to the other.
  7. Cook for another minute, then remove from the pan and slice into pieces.
