Easy Carrot Cake Cupcakes

A delightful and easy recipe for carrot cake cupcakes that everyone will love.

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup crushed pineapples, drained
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.
  4. Gradually mix dry ingredients into the wet ingredients.
  5. Add grated carrots, crushed pineapples, and walnuts to the mixture and stir until combined.
  6. Fill each cupcake liner 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cupcakes cool on a wire rack.

Notes

  • For a cream cheese frosting, mix 8 oz of cream cheese with 1/2 cup of butter and 3 cups of powdered sugar.
