  • 2 pounds boneless chicken thighs
  • 1 cup orange juice
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a bowl, mix orange juice, soy sauce, honey, garlic, ginger, and red pepper flakes.
  2. Place chicken thighs in the crockpot and pour sauce over them.
  3. Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  4. Remove chicken, shred, and set aside.
  5. Mix cornstarch and water in a small bowl, then stir into the sauce in the crockpot.
  6. Cook on high for an additional 30 minutes to thicken the sauce.
  7. Return shredded chicken to the crockpot and stir to coat.
  8. Serve warm over rice.
