Crockpot Chicken Stew

A delicious and comforting crockpot chicken stew that’s easy to make and features a delightful turkey bacon twist.

  • 1 pound boneless, skinless chicken thighs
  • 4 slices turkey bacon
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Prepare the turkey bacon by cooking until crispy, then chop into pieces.
  2. In the crockpot, add the chicken thighs, carrots, celery, onion, garlic, and potatoes.
  3. Pour the chicken broth over the ingredients and add the spices.
  4. Top with the chopped turkey bacon.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  6. Shred the chicken before serving. Stir well and adjust seasoning.

Notes

  • For a thicker stew, add a cornstarch mixture 30 minutes before serving.
