Crockpot Cheddar Broccoli Chicken and Potatoes

A comforting and delicious crockpot recipe featuring chicken, cheddar, broccoli, and potatoes.

Ingredients

  • 1 pound chicken breasts
  • 2 cups broccoli florets
  • 4 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the diced potatoes and broccoli florets on top of the chicken.
  3. In a bowl, mix together the cream of chicken soup, chicken broth, garlic powder, and onion powder.
  4. Pour the mixture over the ingredients in the crockpot.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. In the last 30 minutes of cooking, sprinkle the shredded cheddar cheese on top and cover to let it melt.

Notes

  • For a thicker sauce, add a cornstarch slurry in the last hour of cooking.
  • Feel free to add additional vegetables such as carrots or peas.
