Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup cream
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened.
  2. Add chicken breasts to the pot and cook until browned.
  3. Stir in corn, black beans, diced tomatoes, taco seasoning, and chicken broth. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Remove chicken, shred, and return to the pot.
  6. Stir in cream and shredded cheese until melted and combined.
  7. Serve hot.
