Creamy Cajun Garlic Butter Salmon and Shrimp Stuffed Peppers

Delicious and decadent stuffed peppers filled with creamy Cajun garlic butter salmon and shrimp.

Ingredients

  • 2 bell peppers
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning
  • 8 ounces salmon fillets
  • 8 ounces shrimp, peeled and deveined
  • 1/4 cup cream cheese
  • 1/4 cup sour cream
  • 1 tablespoon minced garlic
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the bell peppers in half and remove the seeds.
  3. In a skillet, heat olive oil and sauté the Cajun seasoning, then add the salmon and shrimp until cooked.
  4. Combine cream cheese, sour cream, garlic, and parmesan in a bowl.
  5. Mix in the cooked salmon and shrimp, then fill the pepper halves with this mixture.
  6. Bake for 20-25 minutes until the peppers are tender.
  7. Garnish with parsley before serving.

Notes

  • For extra spice, add more Cajun seasoning to the filling.
  • Feel free to use other seafood or proteins as substitutes.
