- 1 pound ground turkey
- 8 ounces cream cheese
- 1 cup shredded cheddar cheese
- 1 can black beans, drained
- 1 cup corn
- 1 packet taco seasoning
- 1 onion, chopped
- 1 bell pepper, chopped
- 10 tortillas, cut into strips
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground turkey with the onions and bell pepper until the meat is cooked through.
- Add the cream cheese and taco seasoning, stirring until well combined.
- Layer the bottom of a baking dish with tortilla strips.
- Spoon half of the turkey mixture over the tortillas, then add black beans and corn.
- Add another layer of tortilla strips and the remaining turkey mixture on top.
- Sprinkle with cheddar cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
