- 4 slices turkey bacon
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 cups mixed vegetables
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- In the same pot, add onion and garlic; sauté until softened.
- Add the black beans, corn, diced tomatoes, chicken broth, mixed vegetables, chili powder, and cumin. Bring to a boil.
- Reduce heat and simmer for 20 minutes. Stir in crumbled bacon and season with salt and pepper.
- Serve hot.
