Cowboy Soup Recipe

A delicious and hearty Cowboy Soup made with turkey bacon, perfect for cozy meals.

Ingredients

  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups mixed vegetables
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, add onion and garlic; sauté until softened.
  3. Add the black beans, corn, diced tomatoes, chicken broth, mixed vegetables, chili powder, and cumin. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes. Stir in crumbled bacon and season with salt and pepper.
  5. Serve hot.

Notes

  • Feel free to add other vegetables as desired.
  • This soup can be made ahead and reheated.
