Classic Taco Potato Casserole

The Classic Taco Potato Casserole is a delightful dish that combines the flavors of tacos with the heartiness of potatoes, making it a perfect option for dinner.

  • 2 pounds potatoes, peeled and diced
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 cup salsa

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in taco seasoning, black beans, corn, and salsa. Let simmer for 5 minutes.
  5. In a greased baking dish, layer half of the diced potatoes on the bottom.
  6. Add the beef mixture on top of the potatoes.
  7. Layer the remaining potatoes over the beef mixture, then top with shredded cheese.
  8. Bake in the preheated oven for 45 minutes, or until the potatoes are tender.
  9. Let cool slightly before serving.

Notes

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
  • You can add jalapeños for an extra kick!
