- 2 pounds potatoes, peeled and diced
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups shredded cheese
- 1 onion, chopped
- 2 tablespoons olive oil
- 1 cup salsa
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in taco seasoning, black beans, corn, and salsa. Let simmer for 5 minutes.
- In a greased baking dish, layer half of the diced potatoes on the bottom.
- Add the beef mixture on top of the potatoes.
- Layer the remaining potatoes over the beef mixture, then top with shredded cheese.
- Bake in the preheated oven for 45 minutes, or until the potatoes are tender.
- Let cool slightly before serving.
Notes
- For a vegetarian version, substitute ground beef with lentils or mushrooms.
