Classic Crockpot Sausage Potato Soup

  • 1 pound Italian sausage
  • 4 large potatoes, diced
  • 1 large onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. In a skillet over medium heat, cook the sausage until browned. Drain excess fat.
  2. Add the sausage, potatoes, onion, and chicken broth to the crockpot.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Stir in heavy cream, cheese, garlic powder, salt, pepper, and paprika. Cook for an additional 30 minutes.

Notes

  • For a creamier consistency, mash some of the potatoes before adding cream.
  • Feel free to add vegetables like carrots or celery for extra nutrition.
