Carbonara Pasta Salad

A delicious twist on classic carbonara, this pasta salad features turkey bacon and chicken ham for a hearty and flavorful dish.

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 cup cherry tomatoes, halved
  • 1/2 cup peas
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside to cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove from skillet and chop.
  3. In a large bowl, combine the cooled pasta, turkey bacon, chicken ham, cherry tomatoes, peas, and Parmesan cheese.
  4. In a separate bowl, whisk together the mayonnaise, olive oil, Dijon mustard, garlic powder, salt, and pepper.
  5. Pour the dressing over the pasta salad mixture and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a lighter version, substitute Greek yogurt for mayonnaise.
  • Feel free to add other vegetables like bell peppers or cucumbers.
