Caldo de Res

Caldo de Res is a traditional Mexican beef soup that warms you from the inside out, perfect for chilly nights.

Ingredients

  • 2 pounds beef shank
  • 1 large onion, quartered
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 2 stalks of celery, chopped
  • 1 zucchini, chopped
  • 1 bunch cilantro, chopped
  • 3 cloves of garlic, minced
  • 8 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, add the beef shank and cover with water. Bring to a boil and skim off any foam that forms.
  2. Add onion, carrots, celery, and garlic. Reduce heat and simmer for about 1 hour.
  3. Incorporate potatoes, zucchini, and season with salt and pepper. Continue to simmer for an additional 30-40 minutes until vegetables are tender.
  4. Garnish with chopped cilantro before serving warm.

Notes

  • For added flavor, use bone-in beef cuts.
  • Adjust veggie quantities to your preference.
