Cajun Potato Soup Recipe

This Cajun Potato Soup is a creamy and flavorful dish that combines the richness of potatoes with the smoky goodness of turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, and sauté until softened.
  3. Add the diced potatoes and chicken broth. Bring to a boil and then reduce heat, cooking until potatoes are tender.
  4. Stir in the heavy cream and Cajun seasoning. Cook for an additional 5 minutes.
  5. Using an immersion blender, blend the soup until smooth.
  6. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a spicier kick, increase the amount of Cajun seasoning.
  • This soup can be made ahead of time and reheats well.
