  • 4 large russet potatoes
  • 2 cups cooked chicken, shredded
  • 1/2 cup Cajun seasoning
  • 1 cup honey
  • 1 cup shredded Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and pierce them with a fork. Bake in the preheated oven for about 45 minutes or until tender.
  3. In a bowl, mix shredded chicken, Cajun seasoning, honey, olive oil, salt, and pepper.
  4. Once the potatoes are done, let them cool slightly, then cut them in half lengthwise and scoop out some flesh to create a boat.
  5. Fill each potato boat with the chicken mixture and top with shredded Parmesan cheese.
  6. Return to the oven and bake for an additional 15 minutes until the cheese is melted and bubbly.
  7. Garnish with chopped green onions before serving.
