Beef Barley Soup

A delicious and hearty Beef Barley Soup that warms you from the inside out.

Ingredients

  • 1 pound beef chuck, cut into bite-sized pieces
  • 1 cup barley
  • 4 cups beef broth
  • 2 cups water
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, brown the beef over medium heat.
  2. Add the onions, carrots, and celery, and sauté until softened.
  3. Stir in garlic, thyme, and bay leaf.
  4. Add the beef broth, water, and barley, and bring to a boil.
  5. Reduce heat and simmer for about 1 hour or until the barley is tender.
  6. Season with salt and pepper to taste, and remove the bay leaf before serving.
