Vibrant Asian Cucumber Carrot Slaw

  • 1 cup shredded carrots
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. In a large bowl, combine shredded cucumber and carrots.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, and sugar.
  3. Pour the dressing over the cucumber and carrot mixture and toss well to combine.
  4. Add green onions and sesame seeds, tossing gently.
  5. Let the slaw sit for at least 15 minutes to allow the flavors to meld before serving.
