- 4 large bell peppers
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheese (optional)
- Preheat your oven to 375°F (190°C).
- In a medium pot, combine quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- While the quinoa cooks, prepare the bell peppers by cutting the tops off and removing seeds.
- In a large bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, salt, and black pepper.
- Stuff the mixture into each bell pepper and place them in a baking dish.
- If using, sprinkle shredded cheese on top of each pepper.
- Bake for 25-30 minutes until peppers are tender.
- Serve warm.
Notes
- You can add any other vegetables you like in the filling.
- These stuffed peppers can be made ahead of time and stored in the refrigerator.
