Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine mashed sweet potatoes, maple syrup, almond milk, vanilla extract, and salt. Mix until smooth.
  3. Pour the sweet potato mixture into a baking dish.
  4. In a separate bowl, mix together crushed pecans, rolled oats, brown sugar, and melted coconut oil.
  5. Sprinkle the pecan mixture over the sweet potato layer.
