Vanilla & Speculoos Crêpe Cake

A delicious layered cake made with crêpes and speculoos cookies, perfect for special occasions.

Ingredients

  • 2 cups all-purpose flour
  • 4 large eggs
  • 2 1/2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter
  • 1 cup speculoos cookie crumbs
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon cinnamon

Instructions

  1. In a bowl, whisk together flour, eggs, milk, sugar, and vanilla until smooth.
  2. Heat a non-stick pan and pour in a small amount of batter to form crêpes.
  3. Cook each crêpe for 2-3 minutes on each side until golden brown.
  4. In a separate bowl, whip the cream with powdered sugar and cinnamon until soft peaks form.
  5. Layer crêpes with whipped cream and speculoos crumbs in between.
  6. Refrigerate for at least 2 hours before serving to set.

Notes

  • Let the crêpes cool completely before stacking to prevent sticking.
  • Serve with additional whipped cream or melted chocolate on top.
