  • 4 medium russet potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for about 45-60 minutes until tender.
  3. Meanwhile, cook the turkey bacon until crispy, then chop it into small pieces.
  4. Once the potatoes are cool enough to handle, cut them in half and scoop out the insides into a mixing bowl.
  5. Add sour cream, cheddar cheese, cooked turkey bacon, green onions, garlic powder, salt, and pepper to the potato flesh and mix well.
  6. Stuff the potato skins with the mixture and top with additional cheese.
  7. Return to the oven and bake for another 15-20 minutes until heated through and cheese is melted.

Notes

  • For a spicier version, add some chopped jalapeños to the mixture.
  • These potatoes can be made ahead of time and reheated in the oven.
