- 4 medium russet potatoes
- 6 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake for about 45-60 minutes until tender.
- Meanwhile, cook the turkey bacon until crispy, then chop it into small pieces.
- Once the potatoes are cool enough to handle, cut them in half and scoop out the insides into a mixing bowl.
- Add sour cream, cheddar cheese, cooked turkey bacon, green onions, garlic powder, salt, and pepper to the potato flesh and mix well.
- Stuff the potato skins with the mixture and top with additional cheese.
- Return to the oven and bake for another 15-20 minutes until heated through and cheese is melted.
Notes
