- 6 eggs , separated
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 cup brewed espresso
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/4 cup coffee liqueur
- 1/4 cup chocolate shavings
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, beat the egg yolks and sugar until pale and creamy.
- Gently fold in the flour and cocoa powder.
- In another bowl, whisk the egg whites until stiff peaks form, then fold them into the batter.
- Spread the batter evenly on the prepared baking sheet and bake for 15 minutes.
- Once baked, allow the cake to cool slightly, then roll it up with the parchment paper and let it cool completely.
- In a separate bowl, mix the mascarpone cheese, heavy cream, coffee liqueur, and some brewed espresso until fluffy.
- Unroll the cooled cake, spread the mascarpone mixture over it, and roll it back up.
- Decorate with chocolate shavings before serving.
