  • 6 eggs , separated
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 cup brewed espresso
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup coffee liqueur
  • 1/4 cup chocolate shavings

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat the egg yolks and sugar until pale and creamy.
  3. Gently fold in the flour and cocoa powder.
  4. In another bowl, whisk the egg whites until stiff peaks form, then fold them into the batter.
  5. Spread the batter evenly on the prepared baking sheet and bake for 15 minutes.
  6. Once baked, allow the cake to cool slightly, then roll it up with the parchment paper and let it cool completely.
  7. In a separate bowl, mix the mascarpone cheese, heavy cream, coffee liqueur, and some brewed espresso until fluffy.
  8. Unroll the cooled cake, spread the mascarpone mixture over it, and roll it back up.
  9. Decorate with chocolate shavings before serving.

Notes

  • For an extra kick, you can add more coffee liqueur to the filling.
  • Make sure the cake is completely cool before spreading the filling to prevent it from melting.
