  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • 1/4 cup strong brewed coffee, cooled

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. In another bowl, whisk together the flour, cocoa powder, and a pinch of salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the mascarpone cheese and brewed coffee gently.
  7. Drop spoonfuls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are firm.
  9. Let cool on a wire rack before serving.

Notes

  • For an extra kick, sprinkle some cocoa powder on top before serving.
  • Feel free to add chocolate chips for a richer chocolate flavor.
