Tender Red Wine Braised Meatballs

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups red wine
  • 1 cup beef broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. In a large pot, heat some oil over medium heat and sauté the onion, carrots, and celery until softened.
  5. Add the red wine and beef broth to the pot and bring to a simmer.
  6. Once the meatballs are ready, carefully place them into the pot and cover.
  7. Transfer the pot to the preheated oven and braise for 45 minutes.
  8. Check the meatballs and sauce; if needed, let them cook for an additional 15 minutes.
  9. Serve hot with your favorite side.

Notes

  • For extra flavor, let the meat mixture marinate in the fridge for a few hours before cooking.
  • These meatballs can be served over pasta, rice, or on their own with crusty bread.
