  • 1 cup mashed sweet potatoes
  • 1 cup oat flour
  • 2 eggs
  • 1/2 cup milk of choice
  • 2 tablespoons maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. In a bowl, mix the mashed sweet potatoes with the eggs and milk.
  2. Add the oat flour, baking powder, cinnamon, and salt, mixing until just combined.
  3. Heat a skillet over medium heat and add a little oil.
  4. Pour 1/4 cup of batter for each pancake onto the skillet.
