  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup berry-flavored gelatin
  • 2 cups whipped topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract and milk until combined.
  5. Gradually mix in the flour until just blended.
  6. Pour batter into the prepared dish and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and allow to cool.
  9. Once cooled, poke holes in the cake using a fork and pour the berry gelatin over the top.
  10. Let it sit for at least 2 hours in the fridge to set the gelatin.
  11. Top with whipped topping and fresh berries before serving.
