- 2 medium butternut squash
- 4 cups fresh spinach
- 1 cup cooked quinoa
- 1/2 cup feta cheese, crumbled
- 1/4 cup chopped walnuts
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Preheat the oven to 400°F (200°C).
- Cut the butternut squash in half and scoop out the seeds.
- Drizzle olive oil inside the squash and season with salt and pepper.
- Place the squash halves cut side down on a baking sheet and roast for 30-35 minutes until tender.
- In a pan, heat olive oil over medium heat and add garlic. Cook until fragrant.
- Add spinach to the pan and cook until wilted.
- In a bowl, mix the cooked quinoa, spinach, feta, and walnuts.
- Remove squash from the oven and turn them cut side up.
- Fill each half with the spinach mixture.
- Return to the oven and bake for an additional 10 minutes.
Notes
- Feel free to substitute chickpeas for quinoa for a different texture.
