  • 1 cup sushi rice
  • 1 1/2 cups water
  • 1/2 cup sugar
  • 2 tablespoons rice vinegar
  • 1 cup strawberries, sliced
  • 1 cup whipped cream
  • 1 package fruit roll-ups

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine sushi rice and water in a pot and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  3. In a small bowl, mix sugar and rice vinegar until dissolved. Stir this mixture into the cooked rice.
  4. Let the rice cool to room temperature.
  5. Lay a sheet of fruit roll-up on a bamboo mat and spread an even layer of rice over it, leaving a small border at the top.
  6. Add a layer of whipped cream and sliced strawberries on top of the rice.
  7. Carefully roll the mat away from you, pressing gently to create a tight roll.
  8. Slice the roll into bite-sized pieces and serve chilled.

Notes

  • For extra flavor, add a dash of vanilla extract to the whipped cream.
