  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the grated zucchini and grated apple.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. In a separate bowl, beat the sugar and oil together, then add the eggs and vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients.
  6. Fold in the zucchini and apple mixture until just combined.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Allow to cool before removing from the pan.
  10. For the glaze, beat cream cheese, powdered sugar, and milk until smooth. Drizzle over the cooled bread.
