Southwestern Chicken Salad

A delicious and healthy twist on the classic chicken salad, featuring turkey bacon and fresh southwestern flavors.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt to taste

Instructions

  1. In a large bowl, combine the shredded chicken, turkey bacon, black beans, corn, red bell pepper, avocado, and cilantro.
  2. In a separate bowl, mix together the Greek yogurt, lime juice, cumin, chili powder, and salt.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for later.
