A delicious and healthy Southwestern Chicken Salad recipe that’s easy to make at home.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, fresh or canned
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicken, black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
  2. In a separate small bowl, whisk together the cumin, chili powder, lime juice, and olive oil.
  3. Pour the dressing over the salad and toss to combine.
  4. Season with salt and pepper to taste.
