Smoked Queso

A rich and creamy smoked queso recipe that’s perfect for gatherings.

Ingredients

  • 1 pound Velveeta cheese
  • 8 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes with green chilies
  • 1/2 cup diced onion
  • 2 cloves minced garlic
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped cilantro

Instructions

  1. Preheat your smoker to 225°F.
  2. In a large cast-iron skillet, combine the Velveeta, cream cheese, cheddar, diced tomatoes, onion, garlic, smoked paprika, cumin, salt, and pepper.
  3. Place the skillet in the smoker and close the lid.
  4. Smoke for about 45 minutes, stirring occasionally, until everything is melted and bubbly.
  5. Remove from the smoker and stir in the cilantro.
  6. Serve warm with tortilla chips.

Notes

  • For a spicier version, add jalapeños.
  • This queso can be made ahead and reheated.
