- 1 pound Velveeta cheese
- 8 ounces cream cheese
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes with green chilies
- 1/2 cup diced onion
- 2 cloves minced garlic
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped cilantro
- Preheat your smoker to 225°F.
- In a large cast-iron skillet, combine the Velveeta, cream cheese, cheddar, diced tomatoes, onion, garlic, smoked paprika, cumin, salt, and pepper.
- Place the skillet in the smoker and close the lid.
- Smoke for about 45 minutes, stirring occasionally, until everything is melted and bubbly.
- Remove from the smoker and stir in the cilantro.
- Serve warm with tortilla chips.
Notes
- For a spicier version, add jalapeños.
