Slow-Braised Beef Roast with Cranberry Balsamic Glaze

  • 3 pounds beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 sprigs fresh rosemary

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Brown the beef roast on all sides.
  3. Remove the roast and set aside. Add sliced onion and minced garlic to the pot, cooking until translucent.
  4. Pour in cranberry juice and balsamic vinegar, stirring in brown sugar, salt, and pepper.
  5. Return the beef roast to the pot and add fresh rosemary sprigs.
  6. Cover the Dutch oven and transfer it to the preheated oven. Braise for 3 hours or until tender.
  7. Remove the roast and let it rest before slicing.
  8. Serve with the glaze drizzled over the top.

Notes

  • For a richer flavor, let the roast marinate overnight in the cranberry balsamic mixture.
  • Serve with mashed potatoes or crusty bread.
