- 3 pounds beef roast
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 2 tablespoons brown sugar
- 4 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, sliced
- 4 sprigs fresh rosemary
- Preheat your oven to 325°F (163°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Brown the beef roast on all sides.
- Remove the roast and set aside. Add sliced onion and minced garlic to the pot, cooking until translucent.
- Pour in cranberry juice and balsamic vinegar, stirring in brown sugar, salt, and pepper.
- Return the beef roast to the pot and add fresh rosemary sprigs.
- Cover the Dutch oven and transfer it to the preheated oven. Braise for 3 hours or until tender.
- Remove the roast and let it rest before slicing.
- Serve with the glaze drizzled over the top.
