Shepherd’s Pie Soup

Shepherd’s Pie Soup is a delicious and hearty dish that combines the flavors of traditional shepherd’s pie with the comforting warmth of soup, all enhanced with the delightful addition of turkey bacon.

  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into pieces.
  2. In the same pot, add the onion, carrots, celery, and garlic. Sauté until vegetables are softened.
  3. Add the chicken broth, potatoes, peas, Worcestershire sauce, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for about 20 minutes or until potatoes are tender.
  5. Stir in the chopped turkey bacon and fresh parsley before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Feel free to add other vegetables like corn or green beans.
