- 4 slices turkey bacon
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 cup frozen peas
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into pieces.
- In the same pot, add the onion, carrots, celery, and garlic. Sauté until vegetables are softened.
- Add the chicken broth, potatoes, peas, Worcestershire sauce, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for about 20 minutes or until potatoes are tender.
- Stir in the chopped turkey bacon and fresh parsley before serving.
