  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • salt to taste
  • pepper to taste
  • 4 slices crusty bread
  • fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the onion and bell pepper; sauté until soft.
  2. Add garlic and cook for another minute.
  3. Stir in diced tomatoes, cumin, paprika, salt, and pepper. Simmer for 10 minutes.
  4. Make four wells in the tomato mixture and crack an egg into each well.
  5. Cover and cook until eggs are done to your liking.
  6. Meanwhile, toast the bread slices.
  7. Serve the shakshuka over the toast, garnished with fresh parsley.
