  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup brewed coffee
  • 2 tablespoons melted butter
  • 4 slices turkey bacon

Instructions

  1. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, eggs, coffee, and melted butter.
  3. Combine wet ingredients with dry ingredients until just mixed; do not overmix.
  4. Heat a skillet over medium heat and pour a scoop of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. In a separate pan, cook turkey bacon until crispy.
  7. Serve pancakes with turkey bacon on the side.

Notes

  • For an extra coffee flavor, add a teaspoon of instant coffee to the batter.
  • These pancakes can be stored in the fridge for up to 3 days.
